Today before we went grocery shopping, I got on Pinterest to look up some recipes that I had pinned, was looking for something new for us to try. I found 3 or 4, something besides the same old stuff that we have all the time. So I made the first recipe tonight. It was one that I found on kacina.wordpress.com for Pepperoni & Mozzarella Pasta Salad. Jeff won’t eat it, but I’m going to take for lunch this week instead of the turkey sandwich that I have every day.
I cooked up about 2 cups of bowtie pasta. The recipe picture that she has posted she has used a ziti type pasta.
Then the recipe said to add 1 bottle of Bolthouse Farms Cesar Parmigiano Yogurt Dressing. Well Publix didn’t have this flavor so I just got a creamy cesar and I probably added less than half the bottle. I didn’t think it needed an ENTIRE bottle. I also added a tablespoon or so of Parmesan cheese, you can never have to much cheese. Then I went back to following the recipe and added a dash of salt and pepper, 1 teaspoon of basil. The recipe called for mini turkey pepperoni, Publix didn’t have mini turkey pepperoni and I thought I picked up a pack of mini regular pepperoni, but when I started making the recipe I realized that I got regular pepperoni so I just cut them in fourths to make them smaller. The I stirred it all together to coat the pasta. Then it says when completely cooled to add 1 cup of halved grape tomatoes, I probably used more like a 1/2 cup. I also added about 4 oz of Mozzarella pearls, the recipe called for a full 8 oz. Then stirred until everything was coated and put it in the refrigerator.
I hope this will be a yummy change for lunch this week.
