One of my favorite cookies is the oatmeal no bake cookies. I sometimes buy them in the deli section of the grocery store. I don’t buy them often because Jeff doesn’t like them and I eat them all myself. During the holidays I made them to take to Christmas with my family. They were of course DELICIOUS, and I ate entirely to many!! The only thing I might do different, is I may chose to use quick oatmeal for smaller pieces of oatmeal. I made it by the recipe which called for old fashioned and they were big pieces of oatmeal.
I usually just look for the recipe from the internet.

- 2 cups sugar
- 1/2 cup milk
- 1 stick (8 tablespoons) unsalted butter
- 1/4 cup unsweetened cocoa powder
- 3 cups old fashioned rolled oats
- 1 cup smooth peanut butter
- 1 tablespoon vanilla extract
- Large pinch kosher salt
Place parchment or waxed paper on your surface.
Bring sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally. Let boil 1 minute. Remove from heat. Add the oats, peanut butter, vanilla and salt and stir to combine.
Drop teaspoonfuls on the parchment or waxed paper and let sit at room temperature until cool and hardened, about 30 minutes. Refrigerate in an airtight container up to 3 days.
